What it means
中心 (ちゅうしん) literally means "center" or "core." So 〜を中心に paints a picture: take noun X, put it at the center, and let everything else revolve around it. Depending on context it translates as "centered on," "focusing on," "with X at the core," or simply "mainly / chiefly."
この曲は若者を中心に人気が広がった。
この きょくは わかものを ちゅうしんに にんきが ひろがった。

Notice the two flavors: a focal point ("centered on X") and a main part / majority ("mainly X"). Both come from the same "X is the core" image.
How to form it
It attaches straight onto a noun. There is no conjugation — just pick the variant that fits the slot.

Common mistakes
- Using の instead of を. The particle is を: 若者を中心に (✓), not 若者の中心に (which would mean "the center of the young people" — a different, literal phrase).
- Using を中心に to modify a noun directly. Before a noun you need the adnominal form: 環境問題を中心とした議論 (✓), not 環境問題を中心に議論.
- Confusing it with について. 〜について is "about / concerning" a topic in general; 〜について just names a topic, while 〜を中心に says X is the core/main part with other things around it. 経済を中心に話す = "talk mainly about the economy (and some other things too)."
- Forgetting the reading. 中心 is ちゅうしん, not じゅうしん or ちゅうこころ.
